Blue Arrow is currently recruiting for a full time chef to work with one of our prestige clients.

As a chef you will be responsible for:
Production of all food, unit control procedures as designated whilst on duty.
Report directly to Catering Manager.

Duties:

1 Carry out any reasonable instruction of the management.
2 When required check all incoming purchases as ordered, for quantity and quality and delivery notes / invoices are logged into the kitchen journal correctly.
3 Ensure knowledge of the operation of any kitchen equipment you are required to use, and apply accordingly utilising all safety measures.
4 Produce from the daily tracker using the components standard recipes food required for the day.
5 Ensure food is prepared and cooked to the required standard and service delivery times, using unit recipes and portion control.
6 Replenish where necessary keeping concise records of any additional items used.
7 Assist, where necessary, in food preparation for any functions
8 Maintain all HACCP /Security records including Hot/Cold trolley temperature sheetsand tool checks.
9 Discuss the next day's menu with Catering manager and follow the daily tracker.
10 Assist with mis-en-place for the following days menu.
11 Assist where necessary, in cleaning of work surfaces, storage areas, utensils and equipment.
12 Check all tools are secured before trainees' and staff leave the premises.
13 Follow company or component policy in dealing with customer comments or complaints
14 Comply with Health & Safety Regulations, Fire policy and report hazards to management
